When brown is the new healthy, everyone of us walks towards the brown bread, eggs and rice during grocery shopping. But what if we had another healthier and more exotic option? Yes, you do!

Black rice, also known as purple rice, is originally the species Oryza sativa, some of which are glutinous rice. It keeps you full and improves your gut health. Added to the incredible flavours of poached eggs, it is your perfect go to breakfast.

Try this black rice with peri peri eggs to your list of favorite breakfast, to add that tanka of flavor to your pallet.

  • EGGOZ EGGS                                                1
  • Black rice                                                      1 cup
  • onions ( chopped)                                       0.5 cups 
  • Bell peppers( diced)                                    0.5 cup
  • Carrot (diced)                                               0.5 cup
  • Cup beans( chopped)                                 ¼ Cups
  • Garlic ( chopped)                                         1 tbsp
  • Ginger ( chopped)                                       1 tbsp
  • Red chilli powder                                         1 tsp
  • Black pepper ( as per taste)
  • Salt (as per taste)
  • Oil 
  • Vinegar
  • Parsley ( for garnish) 


  • Take a clean bowl and fill it 3/4th to the top.
  • Place the black rice in water overnight to soften it.
  • Take a deep vessel. Add the same amount of water and boil the rice on high. Let it cook. It takes a bit more time than white rice so make sure you plan the time well.
  • Take a pan. Add a dash of oil, chopped ginger and your proffered amount of garlic 
  • Saute till they are brown and sizzle pleasantly.
  • To this aromatic mixture add onions, bell peppers , carrots, beans and any other vegetable you like.
  • Cook it for 10 mins until all the veggies are a bit soft, and easy to chew. Break it with a spoon to check. 
  • Add your preferred amount of  red chili powder, salt and black pepper to taste.
  • Saute for another  2-3 mins and give it a good mix at the end.
  • Add the cooked rice in the pan and spread it out. Make sure the rice retains it’s natural stickiness.
  • Mix everything completely and adjust the seasoning according to your taste.
  • Take a deep pot, add water and allow it to come to a boil on high flame. Make sure the pot is deep enough to not let the yolk separate from the whites.
  • Once the water is boiled, add the aforementioned amount of vinegar and whisk vigorously to create a bubble or a layer on the top. 
  • Thus creates a vortex of water that will help your egg white wrap cozily around the egg yolk.
  • Break a whole egg in it and allow it to cook for 2 mins or till you reach your favorite egg consistency.
  • After 2 mins, take out the egg and keep it on a tissue paper to soak excess water that may have soaked in. Keep it to dry.
  • Take serving plate, add rice on it and keep the poached egg on top of the rice like your favourite k drama aesthetic.
  • Season it with black pepper and peri peri spice to add the kick of spice.
  • Garnish with parsley and serve hot. Break the white and see the yolk ooze out.
